Ingredients
1 cup (250 g) cooked chickpeas or 310 g can chickpeas
1/2 cup (125 g) tahini
1 teaspoon olive oil
2 cloves garlic, crushed
1/4 cup (5 ml) lemon juice
pepper to taste
Method
1 Drain and rinse chickpeas
2 Puree chickpeas in blender
3 Add Tahini, pepper, oil, garlic and lemon juice. Blend until smooth
4 Serve

1 eggplant (300 g)
2 tablespoons (40 ml) lemon juice
2 cloves garlic, crushed

11/2 cups (300 g) reduced-fat fresh ricotta cheese
1/4 cup sun-dried tomatoes, finely chopped
2 tablespoons fresh basil leaves, finely chopped
1 teaspoon olive oil
