Tzatziki is a creamy combination of youghrt, cucumber and garlic. It makes a refreshing appetizer that can be eaten on its own, with bread or as an accompaniment to meat, specially lamb. The thick, creamy texture of tzatziki, allows it to be used as a dip or spread.
Ingredients
500g (2 cups) plain Greek-style yoghurt
1 lebanese cucumber, peeled
1 large garlic clove, grated or minced
S & P to taste
Method
- Coarsely grate the cucumber and squeeze out the excess moisture with your hands.
- Combine yoghurt, cucumber and garlic in a bowl and mix well. Season with salt and pepper.
