Ingredients
11/2 cups (300 g) reduced-fat fresh ricotta cheese
1/4 cup sun-dried tomatoes, finely chopped
2 tablespoons fresh basil leaves, finely chopped
1 teaspoon olive oil
Method
1 Place ricotta cheese, tomato, basil and olive oil in a bowl.
2 Season with salt and pepper. Mash with a fork to combine.
3 Serve
