Spinach and fetta triangles

 

 

 

 

 

 

 

 

 

 

Ingredients

250g cooked spinach, chopped

250g fetta cheese

3 spring onions

1 egg, beaten

250g filo pastry (16 sheets)

Pepper

Method

  1. Set oven at 160C fan-forced. Spray or brush oven tray with oil.
  2. Mix spinach, fetta cheese, spring onions and egg, season with pepper.
  3. Fold 1 sheet filo pastry into 3, spray with olive oil.
  4. Place 1 Tbsp filling at lower edge of pastry . Fold into small triangle. Continue to fold in triangles for length of the pastry.
  5. Repeat to make 16 triangles.
  6. Spray with olive oil.
  7. Bake in oven at 160C for 25 minutes.
