Ingredients
250g cooked spinach, chopped
250g fetta cheese
3 spring onions
1 egg, beaten
250g filo pastry (16 sheets)

Method
- Set oven at 160C fan-forced. Spray or brush oven tray with oil.
- Mix spinach, fetta cheese, spring onions and egg, season with pepper.
- Fold 1 sheet filo pastry into 3, spray with olive oil.
- Place 1 Tbsp filling at lower edge of pastry . Fold into small triangle. Continue to fold in triangles for length of the pastry.
- Repeat to make 16 triangles.
- Spray with olive oil.
- Bake in oven at 160C for 25 minutes.
