Rice with mushrooms

Rice with mushrooms

A quick, easy and delicious recipes for not quite fried rice. This rice recipe can be served on its own or as a side dish to fried chicken, steak, chicken wings, kebabs. I however, like to prepare this dish when hosting a Barbecue for family or friends. It complements all the meat that I serve very well.

 

 

 

Ingredients

2 carrots

2 celery sticks

300g mushrooms

2 Tbsp oil

2 Tbsp vegeta or any vegetable stock powder

2 cups rice (uncooked) See my recipe for fool proof rice

Method

  1. Wash, peel and shred carrots and mushrooms, wash and chop celery into very small pieces.Vegies for Rice
  2. Heat oil in a pan and put all the vegetables in.
  3. Start cooking the rice, either following my easy microwave rice or your own preffered method.
  4. Turn the heat up so that the vegetables start to release their juices and then turn the heat right down, simply letting them stew, until the celery is soft. Make sure to stir the mixture a few times. As a guide, when the rice is finished cooking the vegetables are usually ready as well.
  5. Turn the heat off and add all the rice to the vegetable mixture, as well as the vegeta seasoning. Mix well to combine and serve.
