If you are looking for something sweet but light to make for your kids or maybe something different to give to your guests, then this macaroons recipe is for you.
Ingredients
2 egg whites
3/4 cup (100g) icing sugar mixture
1 1/2 cups (135g) coconut
1 tsp vanilla essence
Method
- Preheat oven to 160C. Cover base of oven tray with baking paper.
- Beat egg whites until stiff.
- Add icing sugar gradually and continue beating until thick.
- Stir in coconut and vanilla essence.
- Pile in teaspoonfuls onto oven tray and bake at 160C for 15 minutes until slightly coloured.
- Cool. Serve.
Note: The macaroons will keep up to 2 weeks in an airtight container, but are not suitable for freezing.
