Macaroons

If you are looking for something sweet but light to make for your kids or maybe something different to give to your guests, then this macaroons recipe is for you.

 

 

 

 

 

Ingredients


2 egg whites
3/4 cup (100g) icing sugar mixture
1 1/2 cups (135g) coconut
1 tsp vanilla essence

Method

  1. Preheat oven to 160C. Cover base of oven tray with baking paper.
  2. Beat egg whites until stiff.
  3. Add icing sugar gradually and continue beating until thick.
  4. Stir in coconut and vanilla essence.
  5. Pile in teaspoonfuls onto oven tray and bake at 160C for 15 minutes until slightly coloured.
  6. Cool. Serve.

Note: The macaroons will keep up to 2 weeks in an airtight container, but are not suitable for freezing.

This recipe can be easely converted to gluten free, by simply using gluten free icing sugar.
