Lamb Kofte

Minced Lamb Kofte is a traditional Middle Eastern dish. It’s made with minced lamb, onions and spices, shaped into sausages, threaded on to skewers and barbecued or grilled.

 

 

 

 

 

Ingredients

600g lamb mince

1 brown onion, peeled, chopped

3 garlic cloves, peeled, chopped

1 tsp ground cumin

1 tsp groung coriander seeds

1 tsp ground tumeric

Salt and Pepper

Method

  1. Preheat a barbecue grill or an indoor grill plate
  2. Put mince, onion and spices in a food processor and pulse until smooth. Season with salt and pepper and pulse several more times.
  3. Divide mixture into 4 large logs or 8 small ones, push onto metal or bamboo skewers, gently squeezing to adhere or just grill them without the skewers.
  4. Drizzle kofte with oil, then cook without moving for 5 minutes on each side or until cooked.
  5. Serve with tzatziki, a traditional Greek dip made from yoghurt, cucumber and garlic. You can use ready made supermarket one or make it yourself with my quick and easy recipe. Tzatziki Dip
