Chicken breast roll-ups

Do you love chicken but are bored with the old chicken schnitzels? Looking for something different? Then you will love this Chicken breast roll-ups recipe, filled with mushroom, onion and pickles filling. Great for an everyday dinner or when entertaining guests.

 

 

 

 

Ingredients

4-5 chicken breasts (skin removed)

1 onion

250g mushrooms

4 sweet & sour or dill pickles

2 eggs

4 Tbsp cream

2 cups breadcrumbs

oil for frying

S & P

Method

  1. Wash chicken breasts and cut in half, giving you 2 large pieces.
  2. Tenderize each piece to make it larger. Set aside.
  3.  Cut mushrooms, onion and pickles into small cubes. Cook in  a fryingpan in little oil, until onion is soft.
  4. Divide the mixture into even portions, depending on how many pieces you have.
  5. Take tenderized chicken fillet and season with salt and pepper and then spread a portion of the filling on top.
  6. Roll up away from you, folding in sides and then continuing to roll.
  7. Arrange 3 seperate dishes.
  8. In one, beat together eggs, cream and little S & P.
  9. Put the breadcrumbs in the second one. Have the third to put your crumbed chicken on.
  10. Crumbing the chicken roll-ups is easy. One at a time, dip into the egg mixture and then into the breadcrumbs. Making sure to coat well all over.
  11. Fry chicken roll-ups in a little shallow oil, until golden brown. Make sure to turn the roll-ups so that each side is cooked. Serve with your favourite potatoes and salad or vegetables.
