Sernik (Baked Cheesecake)

A basic baked cheesecake recipe. No pastry base, just full of continental cheese.

 

 

 

 

 

 

Ingredients

500g continental cottage cheese (smooth)

4 eggs

125g margarine or butter

1/2 cup caster sugar

1pkt (60g) custard/pudding powder – vanilla flavoured

Method

  1. Preheat oven to 160C. Grease an 11 inch round spring form.
  2. Seperate the eggs.
  3. In a large bowl combine the egg yolks, sugar and margarine, beat together until light and creamy.
  4. Add cheese a little at a time beating well after each addition.
  5. Beat egg whites until soft peaks form.
  6. Slowly fold egg white mixture into the cheese mixture.
  7. Pour the cheese mixture in to the prepared form and bake for 1 hour, or until a skewer inserted in to the middle comes out clean. Cool completely before removing.
  8. To serve, cheesecake must be cold. Dust with some icing sugar or drizzle with your favourite topping.
