A basic baked cheesecake recipe. No pastry base, just full of continental cheese.
Ingredients
500g continental cottage cheese (smooth)
4 eggs
125g margarine or butter
1/2 cup caster sugar
1pkt (60g) custard/pudding powder – vanilla flavoured
Method
- Preheat oven to 160C. Grease an 11 inch round spring form.
- Seperate the eggs.
- In a large bowl combine the egg yolks, sugar and margarine, beat together until light and creamy.
- Add cheese a little at a time beating well after each addition.
- Beat egg whites until soft peaks form.
- Slowly fold egg white mixture into the cheese mixture.
- Pour the cheese mixture in to the prepared form and bake for 1 hour, or until a skewer inserted in to the middle comes out clean. Cool completely before removing.
- To serve, cheesecake must be cold. Dust with some icing sugar or drizzle with your favourite topping.
