This is a traditional Polish recipe. The salad consists of as few or as many ingredients as you want to include. My version has 6, but some of my friends put as many as 10 or more! It is a popular dish, found on every Polish table. Served with a nice rye bread it can be a very wholesome meal by itself. My version consits of the following ingredients : carrots, potatoes, canned peas, sweet and sour pickles, eggs and of cource mayonaise to hold everything together. Other ingredients that you might like to include are: celery root, parsnip, canned corn, canned beans (mix) even some sausage (only Polish of course), but don’t let my list limit your taste, if you want to put anything else in your salad just try and experiment what other flavours might work for you. But I think my recipe is just great as it is.
This recipe is best when prepared the day before.
Ingredients
3 large carrots
3 large potatoes
5 eggs
1 can/tin of peas
3-4 sweet & sour pickles
1/4 of leek
1 jar aprox. 250gr of mayonaise of your choice
salt & pepper to taste
Method
Cook the carrots, potatoes and eggs in a pot until when a sharp knife inserted into the carrot or potato goes in easily. Cook them with their skin on, I find that this process gives the carrots and potatoes a better flavour. Drain and cool.
While the vegetables are cooking, cut the pickles into very small cubes. Chop the leek into very small pieces. Drain the peas and put all in a large bowl. Once the other vegetables and eggs have cooled, peel the skin. Cut carrots, potatoes and eggs into medium size cubes (after you have prepared this salad once you can decide how big the cubes you like). Combine all the vegetables and eggs together, season with salt and pepper and add the mayonaise and mix until everything is coated. Enjoy!
